Our Story

Hi, friends - I’m Erica Boe, owner and planning director of Piece of Cake Wedding Planning! Congratulations on starting your wedding planning journey! I know you have a lot of choices when it comes to choosing a wedding planner, and deciding if you even want one (hint: you do!), and I believe finding someone who connects well with you and your partner is vital for planning success. So, here’s a bit about me, our team and how Piece of Cake Wedding Planning started. Our social feeds show the beautiful, glamorous side of weddings, but most days you can find me working in my home office in my yoga pants, coffee in hand, with my fur baby keeping my feet warm; doing the timelines, mood boards, emails - all of the logistics that go into those gorgeous wedding days - and I absolutely love it!

I have a degree in communication & journalism from the University of St. Thomas, with degree emphasis in public relations and event planning. I’m a born and raised Minnesotan. One of my biggest passions is traveling the world and experiencing other cultures, but I love calling Minnesota home. I live in Savage with my husband, our three littles, and our dog, Luna. Yes, her full name is Luna Lovegood from Harry Potter. I’m a huge Harry Potter fan! I use too many exclamation points. I value quality over quantity. Starbucks is my jam, but finding cute, local coffee shops is even better! Fall is my favorite season, unless I’m on a boat enjoying summer from the water! I love my planner because I like having things actually written down and separating from technology every once in awhile. I will be so very happy for you, but also sad when your wedding is over because I will miss working with one another! Being invited into a couple’s intimate day is an honor, and one that I and the entire Piece of Cake team do not take lightly.

The Piece of Cake Story

I have planned events professionally since 2009, everything from country music festival sponsorships and crisis drills to kids’ triathlons. I worked in public relations, and I loved the event-focused aspect of my job, but I always felt like something was missing. I planned my own wedding in 2012, and my only regret is that I tried to act as my own planner. I missed out on so much of my wedding day because I was handling logistics. My mom was also moving non-stop setting up all of our décor, and I don’t even remember talking with her on my wedding day. I don’t recommend it, and certainly don’t want you to look back on your day with the same regrets. I decided to merge my love of event planning and passion for the wedding industry into one, and vowed to start my own wedding planning company so that no couples would feel how I felt - like they missed out on their day because they were conducting it.

The next few years involved me keeping my day job in PR and helping friends and family with weddings on the side. Fast forward to March 2017, I finally launched this company and never looked back! Piece of Cake is my passion, meaning my couples and the work I do is my passion as well! I keep my promise every day - making sure Piece of Cake couples get to enjoy their wedding days and planning journeys!

You will go into your wedding day already relaxed knowing that we at Piece of Cake have everything handled for you. We understand hiring a wedding planner is an investment, however, by doing so you are giving yourself the best wedding gift because you, along with your family and friends, will be able to live in the moment on your wedding day! We’d love to make that a reality for your special day! We offer three planning services so we’re sure to find the right fit for you and your partner!

Haley Hagstrom | Assistant Planner

Hi, my name is Haley! My love for events started when I was a banquet server for a beautiful wedding venue in college. During this time, I also helped plan events for student organizations on campus. I love watching all of the details come together on wedding days! In addition to working with our Piece of Cake couples, I am a waitress for busy bar and grill. Outside of work, I enjoy attending live music events, checking out new restaurants, walking around the lakes and catching up on reality tv shows.

I was reintroduced to working with weddings specifically in 2022, and I knew I wanted to jump back into the industry! I love getting to know each couple, imagining their vision and then watching it come to life in front of our eyes. Being able to help make that happen for our couples is so fun, and quite the honor. I’m looking forward to helping you on your most special day!

Isabella Williams | Assistant Planner

Hey there! I’m Bella. I am a lawyer living in Minneapolis with my partner Michael, my puppy Fridge, and our two bunnies, Hank and Indy. When I’m not working,  I love a good board game or a movie at the Alamo Drafthouse. I’m definitely a homebody, but I won’t say no to a good trip to Vegas or the UK! In my spare time, I’m all about spending quality time with friends and loved ones and relaxing at a happy hour with chicken wings and cheese curds. I’ve always had a love of food and cooking, but I can’t bake to save my life.

I found my love for wedding planning after working as a bridal stylist for two years in Eagan. I could finally combine my love of logistics and organization (the office/planner aisle at Target is my dream come true) with my need for a creative outlet and most importantly, a space to make people happy on the best day of their lives. Now, here I am, and I’m so excited to work with you! I’m so happy to be a part of the Piece of Cake team, and to make your special day everything that you dreamed of and more!

 
 

Kayla Adducci | Assistant Planner

Hi! My name is Kayla. I recently graduated from the U of MN with my Master’s in Occupational Therapy. In the fall, you can find me tailgating and cheering on the Gopher football team- Ski U Mah! I live in Robbinsdale with my husband and son, Hudson, however, we are currently in the process of building a home. I enjoy spending time with friends and family, either at different dining scenes across the Twin Cities or at the cabin.

I am so excited to be a part of the Piece of Cake team! My background in patient care has given me the listening skills, quick thinking, and patience needed to ensure a smooth wedding day for our couples!
